  • Hi Tammy,

Love your web page, it helped me through this pandemic, because I use to dine out , but you are teaching us how to cook those same meals at home, Yes, Thank you some much.

The reason why I am writing is because, spegitti meat balls , mazzo cheese didn’t melt. Can you explain why?

    Thank you.

    • Hi Eric, Glad I can be of help, during this chaotic time. The mozzarella cheese not melting can be from a number of things.
      1. Type of cheese used. Did you use whole milk low moisture mozzarella?
      2. After placing the cheese into the meatball did u fry it on both sides.
      3. It also helps to add the meatballs to a simmering spaghetti sauce, lower the flame, and cover with a lid to lock in the heat. And this usually does the trick.
      4. Tip…Once you see a small amount of cheese oozing from the meatball, while it’s simmering in the sauce. This is the perfect indication the cheese has melted.
I hope these tips are helpful Eric. Have a nice day.
