Using medium-high heat add oil to an oven-proof skillet.
Add salt and black pepper to chicken thighs.
Place chicken thighs in skillet skin side down and allow the chicken to brown on both sides.
Combine marinade ingredients: apricot preserve, garlic, ginger, chili peppers, rice vinegar, and soy sauce
Preheat oven to 350F
Add marinade to chicken and place in the oven basting chicken every 8-10 minutes.
Bake chicken for 20 minutes or until chicken is cooked thoroughly.
If chicken isn't brown enough after 20 minuter turn broiler setting on high and allow the chicken to brown and sauce to thicken.
If a thicker sauce consistency is desired combine 1 tablespoon of cornstarch and 1 tbsp of water. Combine until a smooth consistency is reached. Add to sauce and combine.
Serve with white or brown rice along with your favorite veggie.
