  • 2 lbs chicken thighs bone-in, skin on
  • salt to taste
  • black pepper to taste
  • 3 tbsps oil to fry
  • 1 tbsp ginger minced / finely chopped
  • 1 tbsp garlic minced / finely chopped
  • 1 1/2 tbsps brown sugar light
  • 2 tbsps soy sauce light sodium or regular
  • red chili flakes to taste
  • 1/3 cup rice wine vinegar
  • 3/4 cup apricot preserve
  • Sauce Thickener Only if necessary
  • 1 tbsp cornstarch
  • 1 tbsp water


  • Using medium-high heat add oil to an oven-proof skillet.
  • Add salt and black pepper to chicken thighs.
  • Place chicken thighs in skillet skin side down and allow the chicken to brown on both sides.
  • Combine marinade ingredients: apricot preserve, garlic, ginger, chili peppers, rice vinegar, and soy sauce
  • Preheat oven to 350F
  • Add marinade to chicken and place in the oven basting chicken every 8-10 minutes.
  • Bake chicken for 20 minutes or until chicken is cooked thoroughly.
  • If chicken isn't brown enough after 20 minuter turn broiler setting on high and allow the chicken to brown and sauce to thicken.
  • If a thicker sauce consistency is desired combine 1 tablespoon of cornstarch and 1 tbsp of water. Combine until a smooth consistency is reached. Add to sauce and combine.
  • Serve with white or brown rice along with your favorite veggie.
