How To Make Egg Muffins. Oven Baked Mini Omelettes With Sausage And Cheese Topped With A Roasted Red Pepper Aiole Sauce.

Ingredients

  • 6-7 Large eggs
  • 2 Medium potatoes cubed
  • 5 oz Turkey sausage
  • 1 cup Mexican 4 cheese blend grated
  • pinch Salt to taste
  • pinch Black Pepper to taste
  • 3 tbsp Olive Oil
  • 1 Roasted red bell pepper
  • 1 cup Mayonaise
  • 1/2 tsp Cayenne pepper
  • 1 tsp Paprika

Instructions

  • Preparation:
    Preheat oven to 375°F. Cut potatoes/Sausage into cube sized pieces. It's more effective when it comes to fitting the ingredients into the cupcakes pan.
    Add 3 tablespoons of olive oil to pan, when oil is preheated and add potatoes first since potatoes take a little longer to cook. When potatoes are halfway cooked add sausage to skillet/pan and fry until sausage is brown. At this point the potatoes will cook even more.
    Remove from the stove top. And set aside.
    Whisk 6-7 eggs really well, until eggs are light in color and texture. Add salt and pepper to taste. Be mindful when adding salt because sausage may already contain added salt.
    Taking cupcake pan, add a pinch of Mexican four cheese blend to pan. Add potatoes/ sausage mixture. Add eggs on top. Be sure add enough egg mixture to cover potatoes/ sausage and sprinkle cheese on top.
    Place in oven for about 20-25 minutes at 375°F depending on your oven, check after 15 minutes. Usually when baking process is completed you would start to smell a nice aroma.
    Once quiche is finished baking. Remove from oven and set aside for about 1 to 2 minutes before removing from pan.
    For sauce:
    Using a food processor, place mayonnaise, roasted red bell pepper cayenne pepper, and paprika into container and blitz for a couple seconds until ingredients are blended and creamy.
    Place in a squeezy bottle or Ziploc bag and place on top quiche.
