Preparation
Taking cleaned chicken breast, season lightly with a pinch Salt and ground black pepper.
Preheat skillet on low-medium heat. Add 1 tablespoon of extra virgin olive oil.
Place seasoned chicken breast into skillet. Allow chicken to sear and cook all the way through on on both sides.
While preparing the Avocado Salsa, be mindful to check on the Chicken Breast.
Dicing Avocado, and Tomato, Slicing Red Onion and Green Onions, Chopping fresh Cilantro.
Using a medium bowl place diced Avocado, Tomato, sliced Red Onions, and Green Onions, freshly chopped Cilantro into bowl. Add Olive Oil and Lemon Juice and combine all ingredients using a spoon or spatula. Cover with saran wrap and place into the refrigerator to stay cool.
Once chicken breast is seared and cooked all the way through, remove from skillet and place onto a plate. Allow the chicken breast to rest while working on the sauce.
Using a small sauce pot place light soy sauce, raw brown sugar and grated ginger into pot. Giving the sauce a quick stir. Allow the sauce to reduce or become thickened. Before removing from the stovetop.
Taking Chicken Breast, top with Avocado Salsa and drizzle with Soy Ginger Brown Sauce.
