Add salt, ground black pepper, garlic powder, egg, bread crumbs and combine with ground chicken.
Take mixture and roll into mini meatballs.
Place chicken meatballs into non-stick mini cupcake pan or lined baking sheet.
Bake meatballs at 350F for 12-15 minutes.
SAUCE INSTRUCTIONS
Using medium heat add orange juice, minced garlic, grated ginger, chili flakes, soy sauce, brown sugar, rice vinegar, honey, orange zest, orange marmalade and combine.
If using cornstarch to thicken sauce: Combine cornstarch and water.
Add cornstarch and water mixture (slurry) to thicken the sauce, while constantly stirring.
When sauce thickens turn stovetop off.
Coat meatballs in orange sauce, arrange and serve.
