Equipment

Ingredients

  • Olive Oil To coat pan
  • 1 lb Shrimp Raw, Peeled & Deveined
  • pinch Salt To Taste
  • pinch Black Pepper To Taste
  • 1 tbsp Butter
  • 1 tbsp Garlic Minced
  • 1/2 of 14.5 oz can Roasted Tomatoes Favorite Brand
  • 1 - 2 cup Spinach Fresh
  • 1 cup Cream Heavy or Half & Half
  • 1/4 cup Parmesan Grated
  • Parsley Garnish

Instructions

  • Thaw shrimp in a bowl of cold water if necessary.
  • Start cooking pasta or rice if serving with shrimp.
  • Add olive oil to the skillet and when oil becomes hot add shrimp.
  • Add salt and black pepper to taste.
  • Cooking shrimp 1/2 way through, before removing from skillet and setting aside.
  • Add butter to skillet, along with minced garlic and combine.
  • Add roasted tomatoes, fresh spinach and combine.
  • Add cream, parmesan cheese and combine.
  • Allow sauce to simmer before re-adding 1/2 cooked shrimp.
  • Cooking shrimp all the way through, add parsley to garnish and serve with your favorite dish.
