Thaw shrimp in a bowl of cold water if necessary.
Start cooking pasta or rice if serving with shrimp.
Add olive oil to the skillet and when oil becomes hot add shrimp.
Add salt and black pepper to taste.
Cooking shrimp 1/2 way through, before removing from skillet and setting aside.
Add butter to skillet, along with minced garlic and combine.
Add roasted tomatoes, fresh spinach and combine.
Add cream, parmesan cheese and combine.
Allow sauce to simmer before re-adding 1/2 cooked shrimp.
Cooking shrimp all the way through, add parsley to garnish and serve with your favorite dish.
