Ingredients

  • Ingredients Needed
  • 6 - 7 lb Chicken
  • 1 packet reduced sodium chicken bullion powder
  • 1/2 tbsp ground black or white pepper
  • One half teaspoon fresh or dried rosemary
  • 3 tablespoon butter
  • 1 1/2 tbsp fresh or dried thyme
  • 1 1/2 tbsp salt
  • 1 1/2 tbsp mince garlic
  • White potatoes sweet potatoes carrots for roasting (Optional)

Instructions

  • Preparation
  • Taking washed and cleaned chicken, separating chicken skin from flesh when finished pat dry.
  • Taking room temperature butter add chicken bouillon powder, pepper, rosemary, garlic, salt, thyme, and combine.
  • Seasoning chicken thoroughly with seasoned butter.
  • Placing in roasting pan, place in preheated oven at 450°F oven on center rack.
  • After 10 to 15 minutes, reduce temperature to 350°F allowing chicken to roast for 20 minutes per pound.
  • Example: A 7 pounds chicken should roast for 2 hour 20 minutes to 2 hour 30 minutes.
  • Placing thermometer in thickest part of chicken, thermometer should read 165°F or greater to assure chicken is cooked all the way through.
  • Removing from oven, allowing chicken to rest for about 15 to 20 minutes before carving.
