6 - 8boneless thinly sliced chicken breast
2eggs
1/2cupbuttermilk
1/2cupwhole milk
1/2teaspoonkosher salt
1/4teaspoonwhite or ground black pepper
2cupsself-rising flour
1teaspoonCajun Seasoning

Preparation
Placing chicken breast between 2 pieces of plastic wrap, using smooth side of mallet, gently pound chicken breast to flatten.
Season both sides with Cajun Seasoning. (Cajun Seasoning can be spicy so season to personal preference).
Taking flour, add kosher salt and ground pepper. (optional add Cajun Seasoning to flour for extra added spice.) Using a fork or whisk combine dry ingredients.
Taking seasoned chicken breast, dredge with seasoned flour. Removing any excess.
Place flour coated chicken breast into egg wash mixture.
Liberally dredge chicken breast with seasoned flour once more, while removing any excess.
Place into hot oil and fry until golden brown on both sides.
Remove and place on paper lined plate or rack to drain off any excess oil.
