3cupsof all-purpose flour
1teaspoonsalt
1teaspoonbaking soda
1teaspoonbaking powder
3teaspoonsground cinnamon
3eggs
1cupvegetable oil
3teaspoonspure vanilla extract
1 1/2cupsof granulated sugar
2cupsgrated zucchini
1- 1 1/2cupsbakers milk chocolate chips
Instructions
Grease and flour 2 8 x 4 pans or 1 9 x 5 pan ( If the pan isn't nonstick) When baking I use a nonstick pan, but for reassurance I usually spray a little nonstick cooking spray into my pans.Preheat oven to 325°FSift flour salt baking powder baking soda and ground cinnamon together using a strainer placed over a large bowl.Using a mixer beat eggs olive oil, pure vanilla extract, sugar and combine in a separate bowl until creamy in texture.Add sifted ingredients to creamed or wet ingredients and combine using a mixer, but be sure not to over mix. Over mixing will activate the gluten in the flour and cause the bread to become tough or hardened. After this process is completed add grated zucchini to the mixture At this point you're going to use a spatula, do not use a mixer because you need to fold the zucchini into the batter. Add bakers milk chocolate chip and fold it into the batter as well using a spatula. Once all ingredients are combined add all of the contents to the baking pan. Place the pan in your preheated 325°F oven. Bake for about 1 hour, depending on size and type of baking pan. If adding all of the contents to one baking pan allow bread to bake for a little longer possibly an hour and 15 minutes.Enjoy!!!
