Preparation
Preheat oven to 350°F
Using low-medium heat add butter, granulated sugar, brown sugar to deep skillet. Quickly stir to combine the butter and sugar.
Add nutmeg, ground cinnamon, allspice, ground ginger and pure vanilla extract. Continue stirring to incorporate all ingredients.
Allow candied mixture to come to a slow simmer, before turning the stove top off.
Remove candied yam mixture and pour onto yams (sweet potatoes).
Cover with aluminum foil. Place into preheated 350°F oven and allow to bake for about 35 -40 minutes on each side.
Uncover and rotate yams to allow even baking and candied syrup distribution.
After a total of about 1 hour to 1hour 15 minutes. Be sure to check on yams to test desired tenderness.
