Ingredients
- Olive Oil To coat pan
- 1 lb Shrimp Raw, Peeled & Deveined
- pinch Salt To Taste
- pinch Black Pepper To Taste
- 1 tbsp Butter
- 1 tbsp Garlic Minced
- 1/2 of 14.5 oz can Roasted Tomatoes Favorite Brand
- 1 – 2 cup Spinach Fresh
- 1 cup Cream Heavy or Half & Half
- 1/4 cup Parmesan Grated
- Parsley Garnish
Instructions
- Thaw shrimp in a bowl of cold water if necessary.
- Start cooking pasta or rice if serving with shrimp.
- Add olive oil to the skillet and when oil becomes hot add shrimp.
- Add salt and black pepper to taste.
- Cooking shrimp 1/2 way through, before removing from skillet and setting aside.
- Add butter to skillet, along with minced garlic and combine.
- Add roasted tomatoes, fresh spinach and combine.
- Add cream, parmesan cheese and combine.
- Allow sauce to simmer before re-adding 1/2 cooked shrimp.
- Cooking shrimp all the way through, add parsley to garnish and serve with your favorite dish.
