Apricot Glazed Chicken Recipe
Ingredients
- 2 lbs chicken thighs bone-in, skin on
- salt to taste
- black pepper to taste
- 3 tbsps oil to fry
- 1 tbsp ginger minced / finely chopped
- 1 tbsp garlic minced / finely chopped
- 1 1/2 tbsps brown sugar light
- 2 tbsps soy sauce light sodium or regular
- red chili flakes to taste
- 1/3 cup rice wine vinegar
- 3/4 cup apricot preserve
- Sauce Thickener Only if necessary
- 1 tbsp cornstarch
- 1 tbsp water
Instructions
- Using medium-high heat add oil to an oven-proof skillet.
- Add salt and black pepper to chicken thighs.
- Place chicken thighs in skillet skin side down and allow the chicken to brown on both sides.
- Combine marinade ingredients: apricot preserve, garlic, ginger, chili peppers, rice vinegar, and soy sauce
- Preheat oven to 350F
- Add marinade to chicken and place in the oven basting chicken every 8-10 minutes.
- Bake chicken for 20 minutes or until chicken is cooked thoroughly.
- If chicken isn't brown enough after 20 minuter turn broiler setting on high and allow the chicken to brown and sauce to thicken.
- If a thicker sauce consistency is desired combine 1 tablespoon of cornstarch and 1 tbsp of water. Combine until a smooth consistency is reached. Add to sauce and combine.
- Serve with white or brown rice along with your favorite veggie.
