Today I’m featuring my mixed fruit zucchini bread in partnership with Paradise Fruit Co. My family enjoys this recipe usually during the summer months, but this time I decided to incorporate a variety of mixed fruits provided by Paradise Fruit Co. the combination of the zucchini and the fruits allowed such a magnificent taste and unbelievable flavor, soft in texture, and can definitely can be enjoyed with that morning or afternoon cup of coffee or tea.

 

Zucchini Bread is a must have during the summer in my household. If I want to put a smile on my kids faces all I have to say is, ” I’m making zucchini bread today,” and their faces light up like the tree at Rockefeller Center, in NY City. “YEAH” They enjoy everything from assisting with getting the ingredients to mixing and tasting the batter.


 

 

Not to mention, once the zucchini bread was finished baking that evening, it was almost impossible for them to allow the bread enough time to set before cutting into it. So this time around I have to admit they were a bit turned off by the fruits. However, after allowing the bread to sit for a few hours, by the next morning it was absolutely amazing. After trying it once more they loved it so much, needless to say it did’t last long. THIS IS DEFINITELY A REPEAT RECIPE!!!

Ingredients

  • Ingredients Needed
  • 3 cups of all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 1 1/2 cups of granulated sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 16 ounces Paradise Fruit Co.

Instructions

  • Starting by preheating oven to 325°F. If using a nonstick pan be sure to grease and flour the pan.
  • Using a large strainer placed over a bowl sift flour, salt, baking powder, baking soda, and cinnamon all at once.
  • In a separate bowl place eggs, olive oil, vanilla extract and sugar, and using a handheld mixer combine all of the ingredients until creamed.
  • Combining wet ingredients with dry ingredients using a mixer.
  • Adding grated zucchini and using a spatula fold zucchini into the batter.
  • Adding Paradise Mixed Fruit and continuing to fold until well combined.
  • Pouring batter into prepared baking pan. Baking for 40 to 60 minutes or are until tester inserted comes out clean.
  • Allowing to cool for about 45 minutes before slicing.
