Chicken Fettuccine Alfredo

My 20 minute homemade Chicken Fettuccine Alfredo pasta dinner, is made with the creamiest tastiest Alfredo sauce ever!!! Made with thinly sliced chicken breast fresh chopped garlic rich flavored heavy cream, and authentic aged freshly grated parmesan cheese.

 

 


In a household of five, two adults, and three children, let’s face it, things can get very chaotic. When school is out, a typical day consists of my kids waking up at the crack of dawn, politely walking or running down the hall and gently tapping me to wake up, not to mention, I go to bed around 3 AM, trying to get as much work done, like editing and uploading my videos while the kids are getting their beauty rest, so getting out of bed really  isn’t one of my favorite things to do.

 

In order for my kids to leave the room, I simply tell them, “Mommy’s right behind you,” LOL. Then they reply, “Ok mommy.” Seconds later they leave the room and head straight to the snack area, grabbing anything from honey buns, guava pastries, as well as candy, yes, anything they can get their little hands on, then it’s back to mommy’s room, asking  for permission to indulge.

 

 

And of course, at this point I have no choice but to give up my comfort and get out of bed, and as for dad, he works an early shift, but always help’s out when he get’s home. Allowing them to be opinionated, I start by asking them what would they like for breakfast, and then the in-house IHOP orders begin. My 7 year old, “Mommy, may I have pancakes, eggs, sausage and corn meal porridge. At this point I’m like Okkkaayyy. In my mind I was thinking something quick and easy, not to mention I still have three more mouths to feed.

 

My five year old, “Mommy may I have toasted bread with jelly, and juiceeeee, expressed with the ultimate squeaky voice. She leaves the kitchen, but not for long, she re-enters to say, also can I have a side of fruit with my toast pleaseeee. 

At this point, my head is spinning, still slightly sleepy, and I hear another voice, “Good Morning Mommy,” it’s none other than my 17 year old son asking, ” mom you making breakfast,” At this point I gave him the look, He replies, “Well if you’re not making breakfast, I can buy breakfast.”

 

 

And then the phone rings, it’s hubby on the line.I mentioned before he works an early shift so very rarely do we get to enjoy each other’s conversation without interruptions. But for the most part we’re able to comfort and provide verbal inspiration to each other. We express love to each other and get back to our regularly schedule routine. 

 

Then it’s, “Mommy he hit me,” and I yell from the kitchen, “stop hitting your brother.” “and my 17 year old replies, “I didn’t hit him.” So the back-and-forth drama begins.

 

 

With breakfast finally on the table and everyone is having a mukbang moment (talking with food in the mouth.) My motherly instincts kick’s in and I respond, “stop talking with food in your mouth before you choke.”

While they’re eating,”finally”, I escapes to the shower, two seconds later, I hear a knock and a voice, “mommy, I need to use the bathroom and of course it’s none other than my 5yr old daughter, before leaving I remind her to wash those hands and close the door and she replies, “okay mommy.” On my way to the room I announce, who’s next to take a shower.

Time to head out and make the best of the day. My eldest son head’s to the mall with his friends, so at this time it’s just me and the munchkins heading to karate lessons.

 

 

 We made it to karate, and upon entering, Good afternoon “Mr. Perez,” “he replies, Good afternoon Prince and Princess, and they take off to join the other kids on the floor. The instructor, “Elevate your left foot and kick with the right foot”, did I forget to mention the entire family take Twaekwondo classes. It’s actually a lot of fun. My husband and I use it as a way to stay fit and burn off all the stress and good eating that we’ve accumalated through out the week.

 

After 2 hours of class, we head to the grocery store to grab the ingredients for tonights dinner. As we approach the entry way to the store my 7 year old grabs the shopping cart. My daughter asks to get in, and once she’s sitting in the cart it’s time to take off.  

 

We get to the register, I realized I picked up so many item’s I didn’t intend to buy, thanks to my darling kids. Lol.

 

We make our way back home, I wash my hands and now it’s time to get started!!! Cleaning my thinly sliced chicken breast. I season the chicken with salt, black pepper, and garlic powder. Massaging the chicken throughly, making sure to coat every piece of chicken.

 

Placing my skillet onto the stovetop, it’s time to bring it home, baby. Starting off with a medium flame. Adding just a bit of olive oil, before I add the unsalted butter. (Adding the olive oil will prevent the butter from burning to fast).

 

Adding the well seasoned thinly sliced chicken breast strips to the pan, allowing it to brown, before turning it over. At this point the kitchen smells so inviting.

 

 

Removing the chicken pieces, setting it aside on a plate. Draining a small amount of oil from the pan, but keeping enough to sauté the finely chopped garlic, adding chicken broth and combining. The chicken broth will help to release any brown bits that were stuck to the bottom of the pan. Adding heavy cream, and combining. I prefer to use heavy cream over using regular milk because it creates a rich creamy flavorful Alfredo sauce.

 

After about 5 minutes, once the cream starts to thicken, add the pre-cooked chicken to the sauce combining before adding a big handful of good authentic parmesan cheese. Adding real parmesan cheese to this recipe really helps to enhance the flavor. Adding a few broccoli flowerettes.

 

 

Adding my precooked fettuccine and giving it a good toss in the sauce. And garnishing with dried parsley!!!!

 

Guys Dinner Is Ready, before I can complete my sentence hubby walks through the door and everyone’s face lights up. The kids run to the door to greet and hug him. My eldest returns home just in time for dinner. And I have to be honest, this moment is the quietest  my house has been all day. All I can here is the sound of their mouths slurping the pasta. 

 

After dinner everyone has nothing but nice things to say, and it’s definitely a rewarding feeling I wouldn’t trade it for the world.

 

If I had to choose a comfort food this would definitely be it, it is the absolute best!!!

 

Creamy Chicken Alfredo

Ingredients

  • 1 tsp olive oil to coat chicken
  • 6 tbsps olive oil to coat skillet
  • 3 tbsps butter unsalted
  • 1 lb chicken breast thinly sliced
  • salt to taste
  • ground black pepper to taste
  • garlic powder to taste
  • 1 tsp garlic chopped
  • 7 oz chicken broth 1/2 of a 14 oz can
  • 1 pint heavy cream
  • parmesan cheese authentic freshly grated

Instructions

  • Take cleaned thinly sliced chicken breast and slicing into strips. 
  • Add salt, ground black pepper and garlic powder to taste along with a drizzle of olive oil. 
  • Using medium heat add olive oil before adding butter to the skillet. Adding olive oil will prevent the butter from burning.
  • Lightly dredge seasoned chicken with all-purpose flour, shaking off any excess.
  • Add the chicken breast to the hot oil and brown on both sides, before removing.
  • Removing chicken and setting aside, Draining any excess oil, but leaving enough to sauté chopped garlic.
  • Add chopped garlic to the pan and sauté the garlic until fragrant.
  • Adding chicken broth, and stirring. The liquid will release the bits from the bottom of the pan.
  • Adding heavy cream and combining.
  • Adding a handful of authentic freshly grated parmesan cheese and combining.
  • Re-adding pre cooked chicken to pan and combining with Alfredo Sauce. 
  • Garnish with dried parsley
